What's Cookin?

Here are a few Pinterest recipes that I've thrown together recently...

I'm just going to be honest...this recipe was not the best. It was really runny which made it hard to stomach. Not sure how to fix that problem...

These came out so good!! My only regret is not making more of them and not having a really good jam to go on the side. We will definitely be making these again very soon! Even my boys ate them up...

20 Minute Skillet Lasagna

Okay, this recipe was SO GOOD and even better the day after and the day after. We had so many leftovers which was great! It took me about 35 minutes to make rather than 20 but still, that's not so bad! I highly recommend this dish! Especially with some garlic bread and a salad on the side! YUM!

  2. I make an "enchilada lasagna" that's soo easy and really not a lasagna at all. It's the same as making regular enchiladas, you just don't roll them up in the tortillas.

    I brown ground turkey in the pan (I use 2 lbs instead of 1), drain, and add 1/2 of the big can of sauce, and 1/2 of the regular bag of taco style grated cheese. Mix.

    I use a 9x13 glass baking dish and layer the bottom with tortillas (I've used small enchilada tortillas, and also larger burrito tortillas. For the bigger ones I cut one in 1/4ths to but on the corners, and another in 1/2 for the middle), spread in the meat mix, anothe relayed of tortillas, the rest of the sauce, sprinkle the cheese on top, and bake as directed on the enchilada sauce can.

    We think it tastes better the next day, so after baking and cooling I cover in foil and let it "gel" in the fridge overnight, then cut into 8 portions and microwave how much you want.

    My husband eats this almost every day for lunch, it's his absolute favorite.
